No Bake Orange Oatmeal Cookies

The high fiber content and low glycemic index of these cookies make them not only a healthy treat for those on a gluten free diet, but a super snack for children and for diabetics.

1/3 cup unsweetened almond butter

1/2 cup  unsweetened frozen orange juice concentrate

Pinch ground cloves

Pinch ground allspice

Pinch salt

1 ½ cups gluten free rolled oats *

1/2 cup unsweetened shredded coconut

¼ cup dried currants

¼ cup blanched slivered almonds

In a medium sized pot over medium heat combine the almond butter,  concentrated OJ, and spices.  Heat until simmering and then add the oats and coconut.  Stir well to combine.  Finally stir in the currants and almonds and mix thoroughly. Working quickly, spoon out tablespoon sized portions and drop onto a foil, or waxed-paper, lined sheet pan. Press with back of spoon to make cookie shape about the size of a silver dollar and about 3/8 inch thick.  Allow to cool for at least 60 minutes prior to serving. Refrigerate. Will keep for a week in the refrigerator.


Use 1 tsp vanilla instead of the cloves and all spice

Add ¼ cup finely diced dried apricots instead of currants

*Although oats do not contain gluten, they contain a protein that occasionally cross reacts with gluten. Oats can be tolerated by most gluten sensitive adults but should not be fed to children with gluten intolerance.
