Jeri’s Gluten Free Banana Blueberry Muffins

2 eggs

2 tbsp corn oil

2 tbsp brown sugar

1 tsp vanilla

3 ripe bananas mashed

1 tbsp cocoanut flour

1 cup almond flour

¼ tsp salt

¾ tsp baking soda

½ cup unsweetened dried blueberries

1 cup walnut chunks


Mix all wet ingredients

Sift together flours, baking soda and salt and gradually mix into wet

Add berries and nuts

Pour into 12 lined muffin tins

Bake at 350° for 30-35 minutes*

*Note: Cocoanut flour will make the muffins turn brown before they are done. Test for doneness by inserting a dry toothpick into the center of one muffin. If it comes out dry, they’re done.
